Cooking with stainless steel cookware can be rewarding once you master a few techniques. Here's a guide to help you get the most out of your stainless steel cookware.
The preparation
Before you start cooking, it’s important to properly prepare your stainless steel pan. Heat your pan over medium heat for about 2 to 3 minutes before adding any oil or food. A properly preheated pan reduces the risk of food sticking. To properly oil your pan, add a small amount of oil and tilt the pan to distribute it evenly over the entire surface. Let it heat until it shimmers slightly.
Tip: To check if the pan is hot enough, add a few drops of water. If the drops slide off and evaporate quickly, the pan is ready.
Cooking
Temperature control is essential for successful cooking. Stainless steel conducts heat well, so you don't need to heat to a very high temperature. Medium to high heat is often sufficient for most temperatures. Don't overcrowd the pan, this will allow for even cooking and prevent food from sticking.
Proper food handling technique can make a big difference when using stainless steel. Don't turn food too early, let a crust form before turning. If you try to turn food too early, it can stick. For example, meat will come off easily once it's nicely browned.
To help you cook, use suitable utensils made of wood, silicone or stainless steel to avoid scratching the surface of your pan.
Properly maintaining your utensils
Proper maintenance will extend the life of your stainless steel utensils. After cooking, deglaze the pan by adding a little liquid (water, broth, wine) to loosen cooking residue. This makes cleaning easier and adds flavor to sauces.
Although stainless steel is generally dishwasher safe, we recommend hand washing utensils with warm, soapy water to maintain their shine.
For stubborn stains or discoloration, use a mixture of baking soda and water to form a paste or a stainless steel-specific cleaner.
